How early is too early to say you like someone?

I've had a guy tell me that there couldn't be a way that I liked him (as I implied) because it was too early.

Always be clear when making such a statement. Share what you like about the person rather than the generic "I like you." The generic statement can imply all types of extremes, which can chase some people away. Though girls like to be appreciated for how they look, guys generally prefer being appreciated for things they say or do. A better option is to say something like "I like how you're able to simplify complex concepts," or "I was impressed with the answer you gave in class today."
