"Catch you later" would imply there will be another time to chat. "Take care" is another way to wish someone to have a good day or good end to their day. Not as in "goodbye forever".

It’s the first time he messaged me I’ve never talked to him on the phone I just know him from work and he asked for my number so I’m just assuming he is done with me forever bc he literally wrote, lol I’ll catch you later. The last thing I wrote was no I’m at home she flew from WA state. And that’s when he said those last words. He was asking me if I’m out of town and that’s when I told him that. So I just found it weird

You weren't mid conversation then. He asked you a question that you answered. Regardless of whether he sees you again, he's just ending the conversation on a pleasant note.
