Definitely not a bad idea. Forget everything anyone tells you about finding the "right environment" to ask out a woman. If she finds you attractive, just about anywhere except for a funeral or a bathroom stall will be the "right environment". For your hiking example, I've gotten a date with a woman on a hiking trail. I said "hi" while passing by, she stopped me and asked for directions, we got to talking, and I got her number. Nothing happened after, but it just illustrates my point that nowhere is inappropriate if she likes you.
Strike up a conversation and if she seems interested and reciprocates, ask her out. You might be rejected often, but shrug it off and move on to the next girl because getting a date is purely a numbers game.
The best advice I ever got on dating is that if she likes you, she'll make it easy for you to "chase" her. There won't be any need for finding the right place/time or persuading her to give you a chance. Just play the numbers game.
