Dating is a process of elimination. You like this guy based on this, you don't like that guy based on that. Nobody is open to everyone, so you have to choose what you want to narrow down your pool of eligible candidates.
Having said all of that, one girl wanting a guy over 6 ft is OK, but if 90% of women want a guy over 6 ft and these guys are only less than 15% of the population, then you start to see a problem. In this case it's not about discrimination, it's about not being realistic. You're entitled to your opinion, but you need to understand that just because you like someone doesn't mean they have to like you back. That's basically how it works.
Nobody is only defined by 1 aspect about themselves. It's ridiculous calling someone "the tall guy" or "the introvert" when they have so much more to them than just that. This unidimentional way of thinking is unrealistic and it's the reason why a lot of people are unsuccessful at dating, but hey like I said you write your own story.

1 yYes. But who says discrimination is bad? If we didn’t discriminate we would be like lower primates , animals. We all discriminate, some discrimination is inherently evil but most is necessary to survive. These are just personal standards that aren’t necessarily bad or good.
I personally have decided marriages arranged by parents are best, the rest takes an incredible amount of discrimination to choose the best partner and an incredible amount of work and commitment on each of the partners involved to have a happy successful marriage and raise good children.

So if you look older than them they expect you to look taller, like a father figure, because they have daddy issues (a red flag for this is wanting a guy to provide or be their safety blanket, instead of just growing up)
If you look younger than them however, they are fine with shorter, because its cute and now you're their "baby" mentality kicks in.
In either case, women who care about either, tend outgrow that in their 30s.

Also, the correct answer is always the honest one, just keep in mind that a partial truth is still a lie, so saying hieght matters is really just lying, you should say you're scared of the vulnerability being an adult brings, as there are other ways a guy will address that problem.

Now, is it unjust to say height matters? Well not really because you can make a case for the advantages and disadvantages. But is it prejudicial? Yes. A short person can’t do anything about their height so it’s just like discriminating against someone with a physical disability.
This contrasts with the male preference for thin over fat because a fat person is able to change their eating habits and or exercise regularly in order to lose weight and men generally do not hold prejudicial preferences for height.

2) Don't blame men for any similar preference , that would be hypocrisy

In my opinion, it’s not discrimination. It’s what you’re attracted to and that’s your right. By the same token, if a guy prefers girls with big boobs, that’s not discrimination either. It’s extremely shallow not to fight your own innate prejudices and give other girls a chance, but it’s not discriminatory. It’s your choice, just like it’s a girls choice to prefer tall guys.

Anyways, the challenge with height is it’s not something can be changed. Where as if someone’s chubby/skinny (depends on your preference or taste) or someone could have dark/light hair, these can be altered.
But, a good solid amount of women don’t mind a man’s height until the dude brings it up lol
Same for his body or clothing style, we have a lot of perseverance when it comes to things.
Most guys will initiate a solid “Nope” on little stuff, they’ll deny this as well.

1 yI don't see it as discrimination. I am a tall woman and I have been surrounded by taller men my whole life and it's what I am attracted to. Physical traits matter and I am more attracted to tall men rather than shorter men ( shorter than myself). Is that discrimination? Not from where I am standing. Either you like something or you don't. It's as simple as that.
