Why would he look for me on instagram and check my page when he rejected me after our first date?

He’s not my ex but we were talking for a while before we met. I removed him from my followers after he rejected me. Months later I noticed he’s viewing my stories, why?

Also I’ve noticed in public when he has seen me he looks at me with serious look like deer in headlights. What does that mean? During our date he couldn’t look me in the eyes and now he openly stares at me when he sees me
