How do you start conversations with people you do not have things in common with?

In my new job, I have started to notice that many patients like having conversations while they are being treated. Since I am one of the first point of contact and also need to keep following up with them during and after ther sessions. I have found it hard to talk to people who I dont seem to have much in common with. It makes it hard that I am introverted. For example, last week we had a new patient that came and looks like he will start treatment. The guy was very young. Almost around my age and for some reason it is hard for me to think about something to say. I overheard that he was a gym rat. Thats why he messed up his arm which is why he is being treated. He was definitely more extroverted then me. Another example, there's a man who comes every week. He seems very serious all the time and has tattoos all over. A coworker of mine took him in. But if it was me I don't know if I would try to make conversation with him.

PS: when I first took this job I did not come to realize that many patients like talking in their sessions. I thought it would be short interactions and basic documentation.
