Should I take a union job that pays less or a non union job that pays more?

Non-union because the Unions take it off the top. Right to work states are where all the good jobs are. North Carolina is one of those places. Unions can kill a company but the Union Bosses live in 5-10 million dollar homes... wonder how that happens !!
