I guess there are some jobs, like construction where, you need to wear hard hats, but, like, some jobs, that "require" uniforms", doesn't really seem necessary, at least to me. So are uniforms really actually needed?

It likely has to do with image and branding. So if required, the company has its reasons. If uniforms are not your thing, don’t apply is your only recourse.
I work in a place where I can basically wear anything I want, as long as it's not "offensive", but, i've worked in uniformed places before. It was ok. I just, don't prefer it because it just feels like I'm being forced to do something, just to make money
That is the idea of all business, “to make money” and the exchange made between employer and employee, money for their time. Your recourse is to start your own business and make your own rules.
If the company thinks they are necessary, they think that they are for whatever reason.
