Whatever is needed to get the job done. I work with tight deadlines, so I can't afford running late. That means daytime, nighttime and - at times - weekend work. It gets balanced out by other days of the week where there's little or no work to deliver.

I usually do them during the day. During final week, it is day and night in pieces so I don't burn myself out. Frequent breaks and splitting up things helps me get a lot more done.
