Big eyes automatically generate empathy in us because they make faces look more babyish. That's all. You'll notice that villians often have much smaller eyes compared to their face and body size. That's because we aren't supposed to feel for them.
I'm fine with it.
And actually there are some anime where they tried to make it seem more realistic I guess by making the eyes smaller.
Or maybe it's just their style.
OKAY To add to the question, why do some white people have slanted eyes too? For example, Andy Whitfield and Joseph Gordon-Levitt.

To exaggerate emotional responses of the characters.
They like big eyes, whites are happening like that.
I had ever seen a chinese anime factory that belong to Japan
that is like worker produce line.
Most of their characters look White, even if voiced in Japanese with a Japanese name.
Let's be clear:
1. No one on the planet has eyes naturally shaped like Anime characters.
2. Asians don't all have slit-eyes.
No one has eyes that big. Thanks for the tip on Asians but I'll go with the 9 1/2 years I lived in Asia if you don't mind.
It's more expressive, I suppose.
