Not sure if it quite counts, but Omega Man, with Charelton Heston always stuck out in my head.
Made in the 1970s about a bio-war between the USSR - as it was back in the Cold War - and China. The disease wipes out most of the population, leaving behind vampire-like humans who can only live in the darkness and who form a cult. Heston in the scientist who was able to inject himself with the cure and is left - he thinks - as the only human left. The "family" as the infected humans call themselves, want Heston dead as he is the symbol of the modernity and technology that destroyed the world.
The film has many of the weaknesses of the films of that time. Still, it is remarkably moody and even has some serious thematic ideas - including, interestingly, some Christian themes - and is pretty effective.
It spooked me as a kid - the soundtrack sticks in my brain to this day - and it remains in my head to this day. As I say, I am not sure that it quite qualifies as a virus/pandemic movie by your definition, but it at least deserves honorable mention.
