I tend to wear a white shirt with an orange tie to break up the grey-if you opt for a dark tie you'll find it can sometimes become monotonous; the brightness will break up the grey (depending what kind of grey also-my suit is "Shark Skin" colored so the orange is a very good foil for it) Otherwise if you're trying to be a little more "professional" go for dark blue or black-I must stress go for plain ties as patterns are too "flashy" and it is very, very difficult to pick a pattern that is appropriate; best to keep it simple and classy.
Shirts darker then the jacket does not look as good as you think.
White and pale blue are the classic colors you would want to start with, pink is actually the third color. Grey is versatile - almost anything can work.
In terms of tie, there is just an enormous range of possibilities. If you want to dress down the look slightly, you could opt for a woven tie, something like this: link that has some texture and looks a little more relaxed.
