Co worker whom I like ask me why I didn’t say good morning to him what could this mean

It either means he's worried he's offended you or he cares.

Though in rarer cases (with more conceited people) I guess it can also be an ego thing, "I said hello, you didn't. What's the problem!".

That he asked does lean towards him caring you acknowledge him.
