I was a professional chef, here are some of my favorite things to make at home (not in order):
1. Stir fry : basically a lot of vegetables and sometimes some animal protein, all sautéed together. Easy, nutritious and delicious. Also an easy clean up with just one knife, cutting board, pan and tongs.
2. Crock pot carnitas: Easy and delicious, the major ingredient is time. Pork shoulder is one of the most affordable cuts out there.
3. (Cheese) burgers: So many different options for how creative you want to get, so many cheeses and toppings. I often leave off the bun to reduce carbs and make it keto/gluten free; a bed of spinach or lettuce is fine. A few favorites in this category at home are:
a) caramelized onions, gorgonzola, and bacon
b) avocado, bacon, sprouts, pepper jack
c) mango chutney, pickled sweet peppers, a fried egg, and melted brie
4. Baked lobster or salmon: not that hard, the key is not to overcook it as people tend to overcook fish making it hard. Remember you can eat salmon RAW (sushi), so it's fine to err on the underdone side and it makes the fish taste so much better. For lobster, if it is covered that will help retain moisture; I also put a pat of butter on it that melts in while baking.
5. Baked sweet potato: simply wash and wrap in foil while still wet. Make sure to have another piece of foil/pan to catch drippings. This little baby will take some time, but comes out so sweet in it's own caramel sugars no need for any seasoning, spices, or added sugar. A real treat.

My signature recipe is a boneless rotisserie chicken breast that retains juicy texture. Usually do a veggie and rice combination with it.
