Water on top of your ketchup: use it or lose it?

Now, we all know that when you take a bottle of ketchup out of the refrigerator, you can tell how angry God is at you by the amount of water on top of the ketchup.

This is not precum, but rather, water has appeared there through a process called syneresis, Syneresis is how chemists talk about liquid being expelled from a mixture. So, your ketchup is basically like a big bottle of tomato blood that's clotting and expelling liquid as it tries to get back to its normal state. Yum.

So, do you keep that juicy liquid by first shaking the bottle of ketchup? Or do you pour it out?
