Borscht is a beet soup that started in Ukraine

I bet your thinking beets, yuck.

Beets may seem like a strange base for soup. But hear me out there are plenty of reasons that you should make me this hearty soup.

For one thing it is full of meat and sautéed vegetables, including cabbage, carrots, onions, and potatoes.

Get this, it can be served hot or cold and is best served with a dollop of fresh sour cream on top.
