No I've never been impressed with gazpacho or borscht to me a soup should be piping hot. The calf foot at jelly some put at the bottom of vichyssoise isn't to my taste either.
As for fruit soups aren't they just smoothies?

  We have borscht warm. It's very nice. Obviously I don't put the cream in it though. Just beetroot soup.

I don't think I've ever had a cold soup before. But that blueberry soup looks delicious! Think I'd add oats or protein in it.
