I actually hate it. I love vegetables, but eggplant is a miss for me. I think it’s the name, partly. I like eggs, but I’m weird about them, lmao, so “egg”-plant just sounded funky to me. It was actually a joke in my household growing up, like my parents would tease me and say we were having “my favorite” for dinner (we never did, shout out mom dukes for keeping it off the menu for 18 years). So by the time I tried it I was already thinking negatively of it, and I didn’t really like it anyway, so I think I’m just going to go through life as “not an eggplant guy.”

Personally I enjoy a good ratatouille every now and again but I also wouldn't be a major eggplant fan by default. I'm more of a zoukini guy.

Giggity! lol But yes, I like eggplant. There's a Chinese restaurant near me that makes an amazing eggplant dish. 🤤 It's the best I have ever had. But generally, eggplant is kind of like the chameleon of the food world, in that it takes on whatever flavour you cook it in, which can make it very versatile. As long as it's not overcooked (like most things), it can be really good.

Now real eggplant? Delicious in eggplant Parmesan, stir fried eggplant with sweet chili hot sauce, I haven’t tried other eggplant dishes though.
