Have you ever eaten Cincinnati Skyline Chili?

I'll never know why they call it chili. It bears no resemblance to what you think of as chili. There are no peppers or chili flavors at all.

It's a sauce that you put on top of spaghetti. It was invented by a Greek immigrant.

You can add kidney beans, chopped onions and/or shredded Cheddar cheese on top. You can even put oyster crackers on top if you want.

My wife is originally from Cincinnati, so she introduced me to it the first time I went back to meet her family.

When I first tasted it I was like "WTF is this?" because I was expecting chili. But later, I found myself Jonesing for it.

We live in California. Every once in a while I'll order a box of 8 cans or so.

My wife and I just had some tonight for dinner. Mmmmmm was it good!

My wife just tops hers with cheese.

I've never tried it but something I've always been curious about is how Chili Con Carne might taste over spaghetti. I tend to make Chili more than just about any other dish so I've sometimes wondered how it would pair with pasta.

I tried looking up a copycat recipes for Skyline Cincinnati Chili and they seem like a fairly conventional Chili recipe (chili powder, cumin, onion, garlic, tomato paste, ground beef, some additional spices/seasoning). The main novelty to me seems to be to top it on spaghetti.

I'm really eager to try it now!

I'm curious about the part where you mentioned that it bears no resemblance to chili. Maybe some of these copycat recipes I'm looking at aren't quite right since the ingredients (at least without carefully examining their ratios) mostly seem to be in common with Chili.

It doesn't taste ANYTHING like chili. There is no heat.
In looking at a copy cat recipe, I see that it does contain some chili powder and cumin, but it also has 1⁄2 ounce grated unsweetened chocolate or 2 3/4 tablespoons cocoa, 1 teaspoon ground cinnamon, 1⁄4 teaspoon ground allspice, and 1⁄4 teaspoon ground cloves.

I see -- very mild on the cayenne/chili! I will have to give one of the copycats a try following the exact ratio and see how it tastes. Allspice also sounds like it'd impact the flavor quite a bit (never tried using it in a chili recipe). I've noticed multiple of them call for Apple Cider Vinegar as well. I'm used to adding a small dash of vinegar to brighten things up at the end but always used white vinegar. That one you're looking at also uses a lot of cocoa and chocolate! I'm used to adding a small dash (along with coffee sometimes) but nowhere near that much.

The other thing that's different is the fact that the hamburger meat is ground fine.
My wife and I have made it ourselves and, after we brown the meat, we pulse it in a blender to get the right consistency.

It's ground beef with tasty seasonings. It just a different kind of meat sauce that's not Italian or Mexican. It's not spicy hot, though.
