Gumbo is my absolute favorite. My sister lived in New Orleans for a while and really got to sample a variety of Cajun and Creole food while visiting her.

Gumbo was my absolute favorite. I've also learned to make my own and can make a dark roux fairly efficiently now. Yet I haven't been able to beat some of the better Gumbo I tried when I visited my sister.

Definitely very relaxing to make that way. I have a tendency to grow bored easily but not so much when cooking things that require careful attention like caramelized onions or roux.

I love jambalaya. A few years ago, while visiting New Orleans, I had the best jambalaya ever at a small restaurant in the French Quarter. If I ever get to go back there, I'll try to find that restaurant again.

if you like oysters and turtle soup, try Felix's on Iberville. They oysters rockefeller and oysters bienville are spectacular, and the turtle soup is excellent.

It's definitely not red beans and rice. I like all of the others, though Jambalaya and (shrimp) Poboys are the two that I eat most often.
