My unpopular opinion is cheddar cheese is the best. My dad once made pizza with cheddar cheese and it was the best pizza I've had. But maybe that's because I just love cheddar that much.
Other than that, mozzarella is the go-to and you can add a little asiago and goat cheese. I LOVE goat cheese on pizza.
There are different kinds of mozzarella it mostly has to do with moisture content, the best for pizza has a lower moisture content. I like to use a combination of mozzarella and provolone, and finish with a bit of both Parmigiano Reggiano and Pecorino Romano
Pizza outlets often use a fake cheese called analogue cheese. I find the hard rubbery block type of mozz is better than the balls in whey when it comes to pizza. Try mixing it with one of the Swiss melting cheeses like gouda.

Mozzarella used sparingly. Most pizza outlets destroy their pizzas by drowning it in cheese.
I live in Italy and usually on pizza here we put on it a cheese which is called " fiordilatte" which is very similar to mozzarella in how it looks but its differently in texture. I don't know if where you are in the world you can find it.

Proper mozzarella cheese is made with the milk of the water buffalo, not the cow; once you've had it, the cow stuff is never quite the same. THAT on a pizza is something phenomenal.
I prefer a mild semi-hard cheese such as gouda, or certain cheddar types.
The aroma comes from the bits and pieces of the other topping and herbs of course.I think the cheese is coated in cornstarch and that is supposed to help keep the cheese fresher longer. But hinders the stretchiness of regular mozzarella

you have to use the right cheese. most restaurant pizza uses Leprino mozzarella, not Kraft like you get in the store and not Buffalo mozzarella
