I know some may have different preferences, but muffins are a quick bread and are meant to be mixed up in a flash. That means to mix them until the ingredients are just combined (some lumps remain), quickly put them in the tin, and pop them in the hot oven. As long as your wet and dry ingredients are thoroughly mixed before combining them, you should have no trouble with consistency. If you overmix, you'll start to develop the gluten, which leads to a gluey texture (a la bread dough texture). Muffins should be light and moist. Lightness comes from proper mixing and prompt baking, moisture comes from the ingredients and avoiding overbaking, which dries it out.
