Highly subjective question, but my personal favourites are:

for breakfast: a fruit bowl with greek yogurt and granola

for lunch: a chicken shawarma wrap with bruschetta (I know it's Italian, but it's so good in shawarma wraps), tabouleh, turnips, a couple cascabella peppers, heavy on tzatziki sauce, and light on some hot sauce

for dinner it could be any of these: pot roast, salmon fillet, chicken pot pie, steak with a loaded potato (with the cheddar cheese, bacon bits, sour cream, and green onion), or a burger (a toasted brioche bun with a bison patty, melted cheddar cheese, kale leaves, tomatoes slices, fried onion rings, avocado or guac, and some kind of burger condiments like ketchup, mustard, mayo, etc.)

Those are my favs. Kinda hard to pick just one.
