Traditionally, pigs were grown in muddy pens which they love because it is similar to their natural habitat. In their natural habitat they carry Trichinosis, a parasite that invades muscle and can lead to death if it is ingested. This is the reason that pork was avoided and that the temperatures for considering pork properly cooked are high in comparison to Beef

Other animals that have trichinosis include, Water Moccasins, and Armadillos. Rattlesnakes on the other hand do not and could be consumed less well cooked. Same reason as pigs environment.
