Oysters are overrated and need to be really fresh. I participated often on parties with oysters and champagne where oysters smelled like 3 days old fish. Those obviously old oysters ware eaten by quests like it was honey. I guess they had interesting toilet time at next day.
We have some Mussels soups in our regional cuisine but I never tried to cook something with mussels.10 Reply

Anonymous(30-35)1 yI'm not familiar with cockles but love the rest. Where I live, we take shellfish year round. Oyster season is just ending. I have today's catch in the refrigerator now. I just shucked a few to munch as a bedtime snack. Clamming season is starting soon. Both are delicious but I have a slight preference for quahaugs over oysters.
Scallops and mussels are less plentiful in recent years. I buy scallops from a fisherman in town. Lately, they've been $40US for 2 pounds. They're delicious raw just out of the tub. Of course, flash sautéed in butter and EVOO is awesome for those who prefer cooked.
Who doesn't love muscles steamed in white wine, butter, shallots and parsley? Sprinkle grated parm and serve with crusty french bread. Around here, they used to be laughably plentiful. The last time I went out, we got a meal after an hour's work. I don't know if they're still in decline or on the rebound. Either way, too scarce to bother with.

I feel like there's more variety in ways to enjoy oysters. Went diving for scallops / clams once in Florida and was very dissapointed when we shucked them with how little edible meat was in them. Gotta add a bunch of stuff to make those enjoyable whereas oysters are fine with a little sriracha. Then there's the fancy stuff like Rockefellers.

Scallops are sweet and meaty.
Clams and cockles are really versatile baked, broiled, fried, in a chowder, or in a pasta dish.
Oysters are unique either raw or fried.
Mussels may be my favorite because where I live mussels are cheap. They are easily farmed. Always available. Always fresh. They have a mild but sweet flavor. Very versatile like clams and cockles. And no worries about sand like clams.

Anonymous(30-35)1 yI like them all, but I love raw oysters on the half shell. Whole Foods sells them and has a special every Friday for a dozen for $12, which is a screamin' deal. I get a dozen most Friday's and have them over the weekend. I had to buy a shucker and learn how to use it. It's harder than I expected.
Muscles or clams in white wine, butter and garlic sauce are a favorite of mine too.
