I usually go for lox, bagel, cream cheese, onions and capers. And some fruit.

Where do you get your lox? And what brand?
@midnightmoon05 Good question! Lox is super expensive so I don't buy it very often. I buy a side of salmon (usually "steelhead", actually) from Costco and cure it myself with salt and sugar, and maybe some fresh dill.
When I buy it I make sure the sell-by date is at least 4 - 5 days out. Preferably it shows as packaged the day I buy it. I'll lightly smoke it sometimes, if I have the time and energy, but usually I just eat it after curing.
It's easy to do if you want to give it a try. Just Google "how to make gravlax" and you'll find plenty of "recipes". Some will suggest putting a heavy weight on the salmon as it cures, but I prefer not to. It forces more moisture out of the flesh, and the texture ends up a little too dense and dry for my taste.
Wild salmon cannot be used for this purpose because wild salmon have spent time in the ocean where they can pick up parasites. Costco salmon is farm raised in pens where they are not exposed to parasites, so it is safe to eat raw.

I tried the brand costco sells. I don’t like it. So I stick with ACME. Local market sells.
I live in NY area… there is a fish whole sale warehouse. We sometimes go there and stock up. Lox, white fish. Yum!!
