Trying to understand about a lot of things people do on this planet can be very questionable, like who in the right state of mind would think bugs landing on food would enhance the quality and flavor of food? Were they just sitting there eating it and then all of a sudden bugs landed on it , and then they decided it tasted better because of it? I know it sounds wild, but it’s not “sewage” so much as a very intense fermentation. The larvae break down the fats and make the texture super creamy and strong.

As a curious eater, I’d try a tiny piece with Sardinian bread and red wine, but it’s definitely an extreme, acquired taste and not for everyone. 🧀🇮🇹
