I like light appetizers so I don't fill up before a main meal. A salad is nice, or some marinated mushrooms. I remember having a fried cheese in a Spanish restaurant, and some shrimp that came sizzling in a little ceramic bowl.
Cheese curds or just about anything with cheese really. Calamari too but there aren't many places around here that have that.
I love burrata with roasted tomatoes, good olive oil, and grilled bread. It reminds me of a tiny trattoria in Rome where the cheese felt almost cloudlike ☁️. I also adore Japanese gyoza, especially pan-fried ones with a crisp bottom and juicy filling, like the ones I had in Osaka at a tiny street stall. Both feel simple yet deeply comforting, with perfect contrast in textures.

Tapas with roasted bread on live oil, cream cheese, smoked salmon, egg, mayonnaise, chopped chives and a small 1/4 teas spoon decoration made of black caviar.
Small 'Flammkuchen' on puffy pasty dough. Puffy dough, mascarpone cream cheese, smoked ham cut in small pieces, thin onion rings a little bit olive oil and black pepper on top. Baked by 180C.
Venison tartar. Super lean fresh venison meat chopped with a sharp knife, fresh onion pieces, green onion finely chopped, egg yolk, white pepper and salt or (curing salt mix for deep red color). Slightly roasted bread as base, tartar mix on that. As decoration something green like chives or green onions, 2 super thin slices of a pickle, soft cooked Quail egg half.
