Girl acting weird after I asked her out?

So I had been really good friends with a girl for a year and finally got up the courage to ask her out. Obviously I immediately got the whole "You're a great guy, but you deserve someone better" speech and we both were cool with staying friends (or so I thought) and now she seems to be acting weird around me? More quiet, never seems enthusiastic towards me. I'm trying to keep up with my normal personality around her but that lack of reciprocated enthusiasm is quite the mood dampener. I don't ask girls out often so it was a pretty huge deal to me. Anyone got a clue what's up? Most times I would be ok with breaking ties with the girl, but she was too good of a friend and too amazing of a girl for me to just forget about her. I just really need an understanding of what the hell is going on...

She's not attracted to you the way you are to here, and she doesn't want you to get the wrong idea and start thinking she may be interested

Still even though she has told you and you acknowledged it. She doesn't want you to see her that way and when you like someone like that anything kind/caring they do is taken to heart.
