Been talking to this girl for a few weeks now on Instagram, She never posts pictures or stories during that time, We made out 3 days ago every since that she posts stories and posts of herself, Any idea why all of a sudden?

Thoughts like this will drive you crazy. Try not to over think stuff it will only make you look controlling and creepy if she gets wind of it. People do strange stuff everyday that doesn't make sense to us but it doesn't mean it has to be about US.

She's probably trying to keep you interested in her so you'll make a move. If you've made out and haven't taken any significant steps to further your relationship, she may be just trying to catch your attention. Plus, if you're not responding to her as much or not reaching out, by posting stories and pictures, she can monitor your response to her (checking if you watched her stories or liking her posts). She could also be expecting you to interact with her posts for further interaction with you. She likes you, or at least she's very interested in you. Talk to her about it!
She could have something personal going on in her life. Also, it could feel like posting photos with you is trapping her into a relationship with someone after just one kiss (there are some asshole guys who actually do this and come across as nice at first). Another reason could be that she just likes to keep her relationships more private.
When my boyfriend isn’t giving me enough attention or is ignoring me I’ll sometimes catch myself posting on my insta story more to get his attention so maybe send her a little kissy face emoji or something Lol maybe since u guys kissed her feelings for u grew and she wants to know if u like her as much as she does
I said to her you coming down later? And she said "I don't think so I think I'm going to stay at [Place where she lives]" and after that i didn't bother responding back
She asked me to come to her house next week before that and i said sure and we said a day and then i said you coming out tonight and then she said that
