I love small eggplants. It is just the right size for one hungry person and it is also a very healthy vegetable.

I like roasted eggplant and I occasionally prepare it just for myself. You cut the eggplant into large pieces for perfect caramelized edges and a tender middle.

For sliced eggplant dishes, slice them no thinner than 1-inch. For cubed eggplant dishes, cut the eggplant into 1-inch cubes (or even a little larger).

Roast eggplant in a hot oven; we find an oven set to 425 degrees Fahrenheit is perfect. At this temperature, the eggplant takes about 30 minutes to roast.

To sum up: I never make fun of smaller things because the smaller, the better the taste. You have all the good nutrients packed in a smaller portion.

To be honest though, I actually make a similar mixed vegetable dish with eggplant in a very similar manner you described. I mix with hot peppers and spices for a side with say chicken. I love my veggies.
