What does it mean when you walk past a girl and initiate a light passing conversation like a Hi…. How are you? only for her to then quickly flinch/panic and engage you in a longer conversation?

I’ve noticed she does this a lot with me.

She could be interested. I'm assuming you want to know if there is romantic interest? If so, ask her on a date. Only way you'll know for sure.
