Depends on if she has notifications on or off. If she has it on then yes she noticed if not then don’t worry about it. I stalk my crush on Instagram and Facebook. He’s pretty locked down but I haven’t seen a girlfriend so there is hope! But if she asks about it play it cool. Do you follow each other? It depends how fast you unlike the post and if she was online that time/having that push notifications turned on. My sister and I tested this a few times. They won’t notice if you unlike the post in less than a few seconds and quickly block them right after. You can always unblock them after 24 hours.

Probably not, when you "unlike" the notification disappears so the only way she would see it was if she was staring at her notifications just at that time. Hope that helps you feel better!
