It means absolutely nothing and I am about 99.9% sure that it is purely coincendence. I do similar fidgeting with out even thinking about it. I catch myself after the fact. It has nothing to do with you sitting down next to her. She was just fidgeting with her earrings and nothing more. This is a big overthink and not something that means anything towards you so don't read into it at all. I bet she didn't even know that she was doing it.

It doesn’t mean anything tbh i play with my earrings and necklace all the time especially during lectures i used to do it when im nervous or stressed or bored but at this point its just a habit and she could just be used to doing it and it doesn’t mean anything even in the workplace its just a self soothing habit
