I was out with friends, really had to go so I squatted somewhere and a boy we were with him tried to watch me, I saw him try to look. It made me feel a bit uncomfortable. Why did he do that?

It depends on how old he is. There is a strong possibility that he was only curious. Boys who have not been around the opposite sex to see what they are like, as in with no clothes on, have a strong curiosity about girls and women. That's why it's a good idea for the parent of the opposite sex to let their children see them pee and shower, etc. I don't mean necessarily all the time, but enough so they understand what the opposite sex looks like.
