Why do some guys date down?

I’m sorry if I come off as shallow. There’s this good looking guy I really like who started dating this chick a bit ago. I never made clear moves on him (since I was dating someone when I first met him) but he tends to be a bit of a flirt with me. And I feel back then I’d even make him a bit nervous. I think I’m a pretty girl with a funny and easy going personality. The girl he’s dating though, while super shy and very sweet, isn’t the cutest. But maybe guys like the demure vibes?
