What size shirt should he wear?

He is anywhere between 5'9- to 6" ft tall.. I don't know maybe he weighs 180-200lbs 🤷🏼‍♀️ he's not muscular or anything just normal looking.. what size shirt & pants does he probably wear.

Impossible to guess. It might be difficult even by seeing just a photo.
Best thing you can do if I understand you correctly, is buy him a voucher for where he normally buys his clothes.

Depends on his neck size and chest size, also arm length

his height is fairly irrelevant

With his trousers, depends on his waist and his leg length
a 6’ guy may have a shorter leg length than a 5’10 guy.
