What does it mean, when a guy says “I was thinking about you”?

I’m friends with this guy, we’re both really attracted to each other. We’ve admit it. He likes to mention it a lot when he's drunk lol. But he's away as he's in the military. I also work mon-fri 9-5. So we don’t text much during the week. we often catch up on the weekends. But he said to me last night, “I was thinking about you this week, but I wasn’t compelled to bother”. I asked him why would he ever think he's going to bother me. He replied “just a hunch”. I told him his hunch is wrong and he should fix it. He laughed.

But what does that mean? If im on his mind, does he like me? Or am I reading into it too much, since I like him?

It just means that he had thoughts that pertained to you. If he's telling you, it's probably a good thing, but I wouldn't think about something like that too much.
