He tries to make me jealous by constantly bringing up how hot she is. And she is the only one who he is following. He does not follow anybody else but her. Why would he do this?

This kind of behavior is more the one of an early teen than the one of an adult. Trying to make others jealous seldom brings the hoped effect. You are playing his game by constantly being on his social media and checking all activities.
