Why would a guy think or believe that a girl likes him especially when he is unavailable, when in fact she never even did?

This guy at work thinks or thought that I’ve had a thing for him or In other words that I like him but yet he is unavailable and I’m not interested in man who are in that position, yet he literally told me that I like him and he won’t deny it I mean even if let’s say I did is that a bad thing bc I don’t want to give him the wrong impression maybe he didn’t like me or doesn’t at the moment and I don’t want him to be discussed about it that I like him so I don't know if it’s a bad or good thing but I made it clear that I don’t like him yet he still tries to be all sweet to me I don't know

Just distance yourself from this man. You seem to contradict yourself about whether or not you like him, and there is nothing wrong with being attracted to someone who’s already in a relationship. However what is wrong is acting on it.

If he is going on about you liking him, it sounds as though he wants you to like him and is in fact chasing you in a round about way. Or he is so egotistical that he is convinced you want him even when you don’t. Either way, avoid him as much as possible. Only talk to him when you need to. Also speak to your manager, explain the situation and tell them that this man is making your working life uncomfortable. Make an official complaint if you need to, but he needs to back off and leave you alone.
There’s no need for this behaviour at work and it’s unacceptable if he’s making your life difficult. You’re working, not trying to hook up at a club.
