Good question! While I don't know from firsthand experience (and don't know why you'd think most guys would; they're not particularly common in most of the world), I DO know a guy who worked on a ranch raising them for a while. Apparently, they're actually very docile, as you might expect for something that's been selectively bred for thousands of years, but compare them to, say, cattle, or buffalo (both of which they can interbreed with), and you'll see it's not always so smooth as you'd like. While they're capable of producing meat, milk, musclepower AND wonderfully soft fur, they don't really have "breeds" dedicated to one over the others like cattle do. What there IS of such things is fairly informal and relatively newfangled.

They're also HUGE- bigger than bison, though not quite as big as gaurs (which, if you're unfamiliar, is what happens when someone looks at a Cape Buffalo and says "But what if it was EVEN BIGGER?"), and can live twenty five or even thirty years.

Anyway, I'm told ranching of them is becoming increasingly popular in the US (well, the parts where they can survive, at least; they ARE cold-weather creatures), since they need much less food than cows. Apparently, the meat's pretty similar to bison.
