Would you feel like they’re disrespecting the relationship between customer and employee? Or would you just feel flattered? Or somewhere in between?
I realize guys don’t get a lot of compliments and this question popped into my head.

Depends. I'm a bit skewed from the normal, I assess the situation, see what they have to gain. If it's seemingly genuine I'll play off the pause with a Thank you, a one sentence story, and a return compliment.
If it's someone I had an issue with, and still no immediate gain, they maybe trying 5o make amends.
From someone I've been flirty with... I'd carry that around for a while. Heck I wore a certain material and brand jacket for 15 years because someone I liked complimented me on it on a few occasions.
I’d just say thank you. Like you said a lot of men don’t get compliments. I mean honestly I don’t need compliments because it’s my job. You would hope that employees would go the extra mile to do their best at their job. It’s nice, but not necessary. At least for me. No I’m not complaining either that I don’t get compliments, but in general a majority of men don’t get them.
I'd be flattered for sure, it'd put a spring in my step for quite a while. As you said, guys don't get to experience that very often, so any time it does happen it feels great.
This used to happen to me frequently back when i worked in the service industry. I always appreciated it. The only thing I didn't like was getting tips. Because I was going to do my best regardless. And since I had a lot of repeat customers I always felt like a tip was less a thank you and more an expectation of premium service the next time. Something by the luck of the draw, business etc. That I couldn't always deliver on.
I'd just be flattered, provided that the compliment was appropriate.
At my office it would likely be for efficiently taking care of the customer / client. It would be nice.
I imagine that happens a lot to women. I always say don’t flirt with customer service. They are paid to be nice to you.
I would love it since I don't get a lot of compliments.
It would be nice I suppose
