Just vegan and healthy

You could try ratatouille. The only "difficult" part is cutting all of the veg into the exact same thicknesses. But if you have a mandolin, that part is effortless.

You'll need about 4 zucchinis, 4-5 Japanese eggplants, 6-7 Roma tomatoes, 2 1/2 medium sized red onions, a can of diced tomatoes, and some oil and seasoning.

You slice the zucchinis, the egg plants, the tomatoes, and the onions. Reserve the 1/2 onion. In a pan with some oil, saute some garlic, your 1/2 sliced onion until tender. Add your diced tomatoes and cook until reduced. Keep that puppy on simmer.

Get yourself a round casserole dish. Put some of your tomato/onion mixture on the bottom of that dish. Layer your veggies in rings, whatever order you like, and season with salt, pepper and a bit of oil each layer. Then top with remaining sauce mixture and some vegan cheese and bake at 400* for 45-60 minutes. Ta dah.

Ice cubes.

Put water into ice cube tray until about 2-3 cm of space is between the plastic rim and surface area of the water.

Next, put on some gloves for safety, and keep electronic devices away from any potential spills.

Next, safely place the tray containing the water into the "freezer" part of your refrigerator.

Allow the water to sit there overnight.

The next morning, remove the tray from the freezer. Inspect the water to make sure it is now in solid form.

Turn the tray upside down and twist the plastic tray until you see the ice gently break, and remove the individual ice cubes from the tray.

i know theyre a little more on the expensive side but they are SO worth it. Even if you get a little one just for yourself.

But other than that, have you looked in Paleo? That might fit your recipe needs.
