How difficult is kayaking?

Its fairly easy. I kayak all the time - started with lakes and now I go on the ocean to fish. When my friends want to take up the hobby, I take them out on the lakes first.

I only flipped once, and at that time there were people surfing, so it was real rough waves.

Not really. The kayak can tip a long way and still right itself, the paddling movement is easy and you can go really fast.

Canoeing (properly) is much harder.

Depends where you're at... but most of the time kayaks are pretty simple to maneuver and you'd have to really be trying to tip them over

Not hard, just don't shift around too much and keep paddling

Not difficult in still waters. A roaring river is another matter
