What would you do if your 7 years old son took a knife to his bedroom on December 24 at night, telling that he is going to kill Santa Claus?

That is definitely a "we need to have a talk RIGHT NOW" thing to say. Knowing myself, and predicting the behavior of my theoretical son, it would lead to long, in-depth discussion on violence, ending with him falling asleep at the table and me carrying him to bed, to have him wake up the next day incredibly distraught and deeply apologetic, saying that he didn't mean it, and only did it because he knew I'd keep him up talking about it, and if he dragged it out long enough, he might be able to catch Santa coming in when we were BOTH supposed to be asleep.

And I wouldn't know whether to scold or high-five him.

This is concerning behavior. He probably needs to get checked out by a professional and maybe call 911 id you feel he’s a immediate threat to himself or others.

I would reassure him that Santa is a good guy and coming with gifts. Young kids are often frightened at the idea of a strang old man entering their house in the middle of the night while everyone is asleep (Santa included). Maybe offer to let him sleep in your room for the night and read a story.

Talk to him and ask him why? Also explain that it is not nice to say that etc. It's best to always talk to your kids hear them out to understand where this is coming from but also to let him know it's not right
