I think the red looks more luxurious because the beige is similar to the colour of coffee stains or mud water, but your more likely to get robbed with he second option because it is such a unique colour for car seats. If you decide you want red car seats, I would tint the car windows so those cannot look inside to see the red car seats and steal your car.
Not an easy choice because once chosen, you live with it ! I have an 'off-white' leather in my Tesla and find it very nice, and since I don't eat in the car or etc, the seats stay clean... Black is hot in the summer... keep than in mind I would stay with what is on the exterior.

So tempting bright Eco-leather seats are I wouldn't recommend them. They look after two years like 10 year old. I have no clue how alcantara or real leather behaves but this artificial stuff looks dirty very soon if it's bright.
Black looks standard, beige looks classy, red looks extravagant.
I would get the black ones. Light colored seats get dirty too fast.
