What would you think it means if someone says "you are like jello" lol?

maybe it means sweet?! lol

I thought it is a new term that they use in English speaking country :P
So I just nodded and pretended that I understood the meaning and googled it afterward lol (like I always do if I do not understand the word) but it didn't give any other meaning other than
"Jell-O is a registered trademark of Kraft Foods for varieties of gelatin desserts, including fruit gels, puddings and no-bake cream pies."

it could mean you're physically rounded and soft, or it could mean you are easygoing and forgiving

.. I can't tell which, as far as I know there's no dictionary definition or recognized slang meaning for this.

It probably means that person thinks you're sweet. It might also mean that they think you're spineless and a pushover.
