I'm going to assume this is an honest question

it is to hide their identity, if you touch many things you can leave incriminating evidence, such as fingerprints, DNA from sweat, and from under your fingernails... also if you scratch something or catch something with your nail, it has a chance of becoming lodged under your nail

however this is a similar issue of why they wear masks and such, as that would prevent saliva form dropping on a crime scene, hair can also be found on scenes and be able to provide incriminating evidence in the form of DNA. so full head masks and gloves is a logical choice however not infallible as DNA can be obtained from so many things and so many ways, also any suspicion of guilt could give reasons for a search warrant to be issued the incriminating search results would confirm so it really is a case of helping to hide the identity of the thief tbh
