In the films you see venom eat someone but it doesn't tell you what happens to the body

I believe it is the symbiote wearing the person who eats them and not the host of the symbiote.. Although I don't think Venom really eats people much..

Yeah I figured you were referring to the films.. I seems like the symbiote swallowed the guy up, and not Eddie himself..

From what I've heard the Saliva coming out of venom is what is left of the the person after being eaten

Yuck, but yeah from the way they try to make Venom an anti-hero, it seems as if the Symbiote is eating the person.. Cause I mean it would be cannibalism for Eddie to do it and nobody sympathizes with a cannibal.. LOL..

He is a bad guy in canon, but Hollywood is doing this thing where they make movies about villains and are making them anti-heroes.. Instead of the villains that they are..

Venom does, the symbiote basically breaks down what it eats like acid and absorbs it into its body, none of it makes it into the mouth of the host.
