If luminary bodies in the sky are mostly round, why do we call them stars and not orbs?

Because aincient man didn't know they were orbs. To the naked eye it's hard to know what shape a twinkling object is. Most likely they compared their shape to aster flowers.

Because a number of centuries calling them that kind of means the name sticks.
